FINCA MAKALEHA KAUA‘I | From our farms to your table

Chef Danny Balogh at home in his garden.
Food brings us joy, health, and vitality. Food connects families and friends, both old and new. The food we eat directly affects how we feel and function in our everyday lives and can impair or improve our energy levels, mental clarity, and overall sense of well being. These are just some of the reasons why I'm so passionate about food.
Every single ingredient, when carefully orchestrated, becomes a symphony of sublime flavor, texture and lasting sensations that stay with you long after the meal is over. Food is the celebration of nature's pantry. Nature's pantry is what is close by, in season and organically produced. I always say, "you gotta eat so you might as well eat the best food nature has to offer."
Here on the Garden Island of Kaua‘i we are very fortunate to have a wide variety of sustainably grown vegetables, fruits, meat, and medicinal herbs and spices available to us. I select my produce from either my personal gardens or one of the many organic farms here on Kaua‘i. I have been experimenting (and getting really stoked!) with the truly sustainable food crops such as breadfruit (ulu), cassava, and taro, as well as the many exotic super fruits that grow here. Several local ranches supply grass-fed and finished beef and occasionally lamb, while the great Pacific Ocean blesses us with Ono (Wahoo), Mahi-Mahi, Opah (Moonfish), Snapper and Yellowfin Tuna.
I take pride in creating a special menu to suit each person's needs, considering dietary restrictions, whether it be a weeklong event or just a night of celebration; I look forward to serving you and your loved ones here on the magical island of Kaua‘i.
Chef Danny Balogh currently resides in Wailua, on the eastern side of Kaua‘i.
